Spinach and Stilton Soup (4)



50g butter
1 onion, chopped
1 leek, chopped
2 sticks celery, chopped
2 tbsp plain flour
5 tbsp white wine
500ml stock
150g stilton, crumbled
50g spinach, chopped
125ml milk
2 tbsp single cream
salt, pepper

  1. Fry onion, leek, celery in butter
  2. Add flour, cook for 1 min
  3. Stir in wine, stock, spinach
  4. Simmer for 25 mins
  5. Cool, blend, reheat
  6. Add Stilton, cream, seasoning
