150g butter
150g soft dark brown sugar
150g golden syrup
200mlmilk
250g plain flour
1 tsp ground cinnamon
1 tsp ground ginger
1 ½ tsp baking powder
2 eggs, beaten
75g pecans, chopped
3 pieces stem ginger, chopped
2 apples, peeled, chopped
- Line 2 litre loaf tin
- Melt butter, sugar and syrup
- Add milk
- Sift flour into a bowl
- Add spices and baking powder
- Add sugar mixture
- Fold in eggs, pecans, ginger and apples
- Pour into loaf tin
- Bake 180, GM4 for 50 minutes
